Food follows the day.
Some days are light and simple. Some call for handmade pasta, truffles or something slow from the kitchen. What matters is not a wellness rulebook, but appetite, season and the pleasure of being properly fed.
The table sits inside the same rhythm as the rest of Dojo: the horses outside, the dogs passing through, olive trees beyond the house and nowhere urgent to be afterwards.

The menu responds to what is good now, rather than repeating the same idea of “healthy” all year.
Our olive oil belongs to the place itself — part of the landscape, the kitchen and the table.
Meals are not squeezed between activities. They are part of the experience, and sometimes the best part of the afternoon.
